I recently went to a cooking class with my Aunt Kim and one of my favorite items we learned about was zucchini spaghetti. What is zucchini spaghetti you might ask? Well it is an awesome and healthy alternative to pasta. Pretty much is exactly as it sounds.
You will need a handy dandy GEFU to string your zucchini. I would use about 3-4 medium sized zucchinis. Heat skillet on stove to med/high heat, add a little oil (pick your favorite olive, coconut, grape seed), once oil is hot then add the zucchini pasta. Toss it constantly for about 2 minutes until zucchini is tender (it will still have a little crunch). I added a little pesto to mine but I am excited to try other sauce variations as well. Et voila!
